My New Go To – Egg & Spinach Muffins
If, like me, you sometimes struggle to make time for a super healthy start to the day – try these amazing egg & spinach muffins.

To make 12 I do the following:
I part cook either sweet potato or cauliflower hash browns and place half in the base of each.
I then add a good layer of chopped fresh spinach and crack an egg on top.
These go in the oven at 180 degrees C for 15-20 mins depending on how runny you want your yolks to be.
Once fully cooled these can be frozen or simply kept in the fridge. I then warm them in the microwave if i want them hot. Alternatively, I take them with me cold for food on the go.
